I whipped up these super easy almond butter cookies in no time at all. They are perfectly dainty, crisp and just sweet enough to accompany a hot cup of coffee or cocoa.1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 stick butter, room temperature
- 1/2 cup almond butter
- 1 egg
- 1 1/4 cup flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Preheat oven to 375°.
Mix together dry ingredients – flour, baking soda, baking powder and salt. Set aside.
In the bowl of a stand mixer, beat the butter until creamy, about 2 minutes. Add the sugars and beat for 2 more minutes. Mix in the almond butter and egg. Stir the dry ingredients into the sugar butter mixture.
Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 10 to 12 minutes. Cool on baking sheets for a minute, then transfer to rack to cool completely.
